I've been interested in ordering certain ethnobotanicals for some time, but I hesitate to order anything out of paranoia. Is it risky to order ethnobotanicals such as Salvia cuttings, San Pedro, and Mimosa rootbark in the U.S.? Or am I just paranoid?

They're all legal, and the chemicals in salvia are all legal to consume. Tho the chemicals in the others (mescaline/dmt) are illegal to consume, the plants are themselves not illegal.

I understand the legality issues, I'm more worried about something similar to the fabled 'High Times Subscriber List' that ,supposedly, is sent to enforcment authorities. Or am I just really paranoid?

Even if, somehow, your name was sent to the authorities, what could they do? Bust you for buying legal things?

True! Sounds like a little paranoia there ;)
In Oz on the other hand, Salvia is completely illegal and there is cause to be cautious.

Do you encounter salvia on the blackmarket there or has it vanished?
Mushrooms practically vanished in the UK when they banned them

Triangle, just because you are paranoid doesn't mean they aren't out to get you, haha.
Salvia is illegal in some states. TN. MO. and LA for sure. Most sellers won't ship to a state where it is illegal, however I was able to get sally anyway because my seller didn't know it was illegal in my state. Neither did I until I did a bit of digging around. So, reluctantly I posted that to Erowid and cut off my own supply:/

Section 102 of the Controlled Substances Act (21 U.S.C. 802) is amended by adding at the end thereof the following:
"(32)(A) Except as provided in subparagraph (B), the term `controlled substance analogue' means a substance ---
"(i) the chemical structure of which is substantially similar to the chemical structure of a controlled substance in schedule I or II;
"(ii) which has a stimulant, depressant, or hallucinogenic effect on the central nervous system that is substantially similar to or greater than the stimulent, [sic] depressant, or hallucinogenic effect on the central nervous system of a controlled substance in schedule I or II; or
"(iii) with respect to a particular person, which such person represents or intends to have a stimulant, depressant, or hallucinogenic effect on the central nervous system that is substantially similar to or greater than the stimulant, depressant, or hallucinogenic effect on the central nervous system of a controlled substance in schedule I or II.
